I don’t know what it is, but recently I’ve been feeling SO passionate about cooking again. I mean, I’ve always been passionate about it, but there did come a time where I wasn’t feeling so inspired. I think it’s probably the fact the grocery stores are stocking more summer ingredients and things are getting a bit more interesting again. I also think it’s because we’re undergoing a bit of a dietary change, I will talk about this more in the coming weeks, but if you follow my blog regularly, you’ve probably noticed an abundance of vegan recipes, and I am absolutely loving coming up with creative, delicious and nutritious vegan recipes, these refried bean lettuce wraps being one of them…
Beans are some of the most nutritious plant foods there are, they are packed with protein and fibre and create a really filling, satisfying base to any meal. Mexican food (or my adapted version of Mexican food) is a great place to start for a beany meal, and these refried bean lettuce wraps are just… YUM.
I’m not gonna lie, I am also trying to lose some weight. I’ve been on diets in the past (with some success) but no long term success. I’ve come to a point where I really want to just make a lifestyle change and actually start living in a healthier way, without cutting out food groups (no low-carb for me, thank you), or major calorie restriction, because I know long term, those things don’t work.
By making a few switches here and there, I’m starting to notice some difference. One example is switching out the regular tortillas for romaine lettuce leaves! They work so well for something like this as they wrap nicely, and they add a nice fresh crunch to the wraps as well. They definitely don’t leave me craving anything!
